Summer Veggies with Rice Recipe:

Ingredients:

  • Bell pepper & sweet lunchbox pepper
  • Kohlrabi
  • Mixed heirloom tomato
  • Mizuna & mixed mustards
  • Brown rice
  • Tahini
  • Lemon juice
  • Sweet vinegar / apple cider vinegar
  • Ground coriander
  • Turmeric
  • Kalonji seed
  • Salt

Directions:

  1. First, chop your tomatoes roughly and place them in a bowl with cold water and salt. This salts them without losing any of their structure. The salt water should taste like the sea.
  2. Now, chop your peppers, kohlrabi, and greens finely, and add to a separate bowl with your cooked, cooled rice.
  3. While the tomatoes brine (all of 15-20min), whip your tahini with equal parts tahini, cold water, and a splash of lemon juice. It should first form a white, creamy emulsion, and then with the addition of more water, a thick dressing you can pour over your rice salad.
  4. Remove the tomatoes from the brine and mix all veggies, rice, and tahini mix together. Now season to taste with the rest of the spices listed.
  5. If you have any fresh herbs, add those as well! You really can’t go wrong with a mostly raw, summer salad like this. The veggies will do all the work for you!
