A second Kowloon concept will open in N.H. this summer

Kowloon has collaborated with The Brook in Seabrook, N.H., to bring a restaurant and nightlife concept that will even include some Kowloon menu favorites.

Kowloon, the iconic, decades-old Chinese restaurant in Saugus, has a collaboration in the works that will bring some of its most popular dishes to a New Hampshire casino. 

The Brook in Seabrook, N.H., announced on Monday that an Asian dining concept is coming to its casino-entertainment venue this summer with the help of the Wong family. Andre Carrier, The Brook’s CEO, promised the menu would feature some Kowloon favorites — think “the top 15 to 20” of Kowloon’s most ordered items, like lobster sauce dishes, he said — but he made clear this wouldn’t be a second Kowloon.

“You can’t do Kowloon twice, right? You shouldn’t tamper with that,” Carrier said. “This is a cousin, it’s not a twin, it may not even be a sibling. But the feeling should be there.”

Carrier said this new restaurant would have its own culinary identity outside of the Kowloon staples available. The Brook has not yet released a menu publicly — or even the name of the restaurant — but Carrier described the cuisine at this Seabrook spot as Chinese fine dining “for everybody.”

The New Hampshire casino also touted the new restaurant as a nightlife destination, featuring multiple dining rooms, a private event space, two bars, and a lounge for live music and entertainment. It’s sort of like Kowloon in that way, with its sprawling space made up of several rooms and a cocktail lounge slinging tiki bar drinks — though it’s had plans in the works to scale back in size since 2022. 

“Cocktail lounges were a cool thing where you’d get these fabulous drinks, like a Mai Tai or a Scorpion bowl,” Carrier said. “We want to reimagine that for the current day.”

As much as it will be for the Kowloon enthusiasts of New England, it will also be for those who didn’t grow up celebrating those special occasions at the Saugus institution.

For now, they’re calling the collaboration “Project Dragon,” a nod to this year’s Chinese Zodiac sign. 

This restaurant — devised after two years of planning — isn’t the first time the family behind the Saugus landmark and The Brook have partnered together. Lucky’s, one of the casino’s several restaurants, hosted two sold out Kowloon pop-ups for Chinese New Year. Carrier said it spoke to just what this restaurant means to the people of New England — not just Kowloon’s food, but memories it gives the people who dine there.

“There are so few Kowloons in the world, there are so few legacy restaurants like this,” Carrier said. “The humility with which I greet this opportunity to work with this incredible family, I cannot overstate it.”
